Turnip Pudding with Yun Nan Ham and Fragrant Mushrooms 雲腿香菌蘿蔔糕

材料:乾香信6隻、雲腿蓉35克、免治豬肉50克、蘿蔔刨絲約500克、粘米粉120克、粟粉30克、蔥花2湯匙

PreparationMethod:
1. Soak the mushrooms in a bowl of water, cover with heatproof plastic wrap then place in the Miele puresteam at 40℃ for 30 minutes.
2. Squeeze out the water from the mushrooms and dice into small pieces.
3. Stir the seasoning and green onion into the minced pork.
4. Mix the rice flour and corn starch in a small bowl.
5. Mix the mushrooms, ham, minced pork and turnips in the container, then place in the Miele puresteam at 100℃ for 40 minutes.
6. Sift the flour mixture into the turnip mixture. Stir until thoroughly blended, then transfer the mixture into a cake tin.
7. Place in the Miele puresteam at 100℃ for 60 minutes until done.

做法:
1. 乾香信放碗中注入清水至蓋面,加蓋耐熱保鮮紙放Miele蒸爐以40℃蒸30分鐘。
2. 將香信擠乾水分切成小粒備用。
3. 免治豬肉加入調味料及蔥花拌勻。
4. 小碗中放入粘米粉及粟粉拌勻備用。
5. 密底容器中放入香信粒、雲腿蓉、免治豬肉及蘿蔔絲拌勻,放Miele蒸爐以100℃蒸40分鐘後取出。
6. 將粘米粉以茶隔篩入雜菌蘿蔔絲中充分拌勻,再以金屬糕盆盛載。
7. 放Miele蒸爐以100℃蒸60分鐘即可享用。
Tips

Cooking tips:
1. For extra texture, cut the turnips into thicker slices. The pudding is done when you can insert a chopstick into it and it comes out clean and free of batter. Compared to frying in a wok, you can use less oil. The dish is also healthier and quicker to prepare.
2. Preparing tulip pudding can be very time consuming, especially the lengthy steaming process. When using a wok, you can only steam a small portion at a time. With Miele puresteam, however, you can save time by steaming up to 8 rectangular puddings simultaneously. When hairy crabs are in season, you can steam as many as 12-24 crabs at the same time, depending on their size.

1. 可將蘿蔔切成粗絲以增加口感。用筷子插入糕中,拔出來沒有黏上濕粉漿即表示熟透。此食譜不用落鑊不停炒,用油更少,較健康且快捷方便。
