Coconut Nian Gao (New Year glutinous rice cake) 椰汁年糕

Preparation1) Grease the cake pan with oil. Put both glutinous rice flour and potato starch into a bowl. Boil water in a pot and put in cane sugar slabs. Cook until sugar dissolves and turn off the heat. Stir in coconut milk and vegetable oil. Strain the syrup to remove any lump.

2) Add one-third of the dry ingredients into the syrup at one time. Stir until well incorporated after each addition. Strain the batter again. Pour into the greased pan. Steam in Miele puresteam at 100°C for 90 minutes. Serve.

1) 糕盤薄薄掃上菜油。糯米粉、澄麵同放大碗。水煮沸,放入片糖煮溶。熄火拌入椰汁、菜油,過篩隔顆粒。

2) 分數次將粉類拌入椰汁糖水中,拌至均勻。粉漿過篩注入糕盤,放Miele蒸爐以100℃蒸1.5小時。
