PreparationCut the sea cucumber, chicken and pork into pieces. Blanch in boiling water. Rinse in cold water. Drain and set aside. Peel the carrot and cut into pieces. Put all the ingredients into a double-steaming pot. Add enough boiling water to cover all ingredients. Cover the lid. Steam in Miele puresteam at 100°C for 2 hours. Season with salt and serve.

海參、雞及瘦肉切成小件,以沸水汆燙。再以冷水沖淨,瀝乾。甘筍去皮切小塊。所有材料放燉盅內,注入沸水蓋面,進Miele蒸爐以100℃蒸2小時,以鹽調味即可。


Tips1) Miele puresteam can speed up re-hydrating process of dried seafood. To re-hydrate dried sea cucumber, simply put it in a bowl. Add boiling water to cover. Cover the lid or seal with microwave-safe cling wrap. Steam in Miele puresteam at 60°C for 2 hours. Leave it to cool in the oven. Check whether the sea cucumber is soft enough. Drain and refill with fresh water. Repeat the steaming and cooling steps till fully re-hydrated.
