Preparation1) Soak almonds and Chuan Pei in water for 30 minutes. Drain. Crush Chuan Pei. Cut the top 1 cm off the pear. Keep the cut top for later use.

2) Scoop the core and some flesh out of the pear with a teaspoon. Fill the hollowed pear with almonds, Chuan Pei and rock sugar. Add water until 80% full. Put the cut top back on. Secure with toothpicks. Put the pear in a deep dish. Steam in Miele puresteam at 100°C for 1 hour. Serve.

1) 南北杏、川貝浸清水30分鐘,瀝乾。川貝壓碎。切去雪梨頂部1厘米,保留頂部備用。

2) 用茶匙刮出雪梨芯及部份梨肉。放入南北杏、川貝及冰糖,注入清水至八分滿,蓋上梨頂以牙簽固定。雪梨放深碟,進Miele蒸爐以100℃蒸1小時即可。
