Preparation1) Chop the bones and fins into pieces. Blanch in boiling water. Rinse in cold water. Drain.

2) Soak the dried tangerine peel in water for 30 minutes. Scrape off the pith with the back of a knife.

3) Cut the pork shin and lean pork into pieces. Blanch briefly in boiling water. Rinse in cold water. Drain.

4) Rinse the dried longans and set aside.

5) Put all the ingredients except the goji berries into a double-steaming pot. Add water to cover. Cover with a lid and steam in the Miele puresteam DG 6010 steam oven at 100°C for 3 hours.

6) Rinse and drain the goji berries. Add them to the soup in the double-steaming pot. Steam in the DG 6010 for 30 more minutes. Season with a little table salt. Serve.

1) 龍躉斬成小塊,以沸水略燙,過冷河瀝乾。果皮以清水浸30分鐘,以刀背刮瓤。豬腱、瘦肉切小塊,以沸水略燙,過冷河瀝乾。圓肉洗淨。

2) 全部材料放燉盅內(除杞子外),注入清水蓋面,加蓋放Miele蒸爐,以100°C蒸3小時。

3) 杞子洗淨瀝乾,加入燉盅,再蒸30分鐘。以少量幼鹽調味即可。
