Low-fat Cream of Pumpkin Soup with assorted mushrooms (serves 2 to 3) 低脂雜菌南瓜湯 (2至3位份)

To PDFIngredients6 fresh shiitake mushrooms (diced), 6 white button mushrooms (diced), 50 g oyster mushrooms (diced), 400 g pumpkin (de-seeded, peeled, diced), 3 cloves garlic (steamed), 1 cup chicken stock, whipping cream

Seasoning: 2 tsp extra virgin olive oil, salt and pepper

PreparationIn a soup bowl, put in all mushrooms, pumpkin, garlic and seasoning. Pour chicken stock over. Steam in Miele puresteam at 100°C for 30 minutes. Puree the mixture with a hand blender over high speed for 30 seconds until fine. Garnish with a dash of whipping cream.

菇類、南瓜肉、蒜肉加入調味料拌勻放湯盅,加入清雞湯,放Miele蒸爐以100℃蒸30分鐘。用手提攪拌器以高速打30秒至幼滑。以少量淡忌廉作裝飾即可。


Tips1) Steam whole garlic cloves at 100°C for 60 to 80 minutes until soft. Their sweetness is heightened and the pungency is subdued after steamed.
