Pork and mushroom Shaomai (makes 30 dumplings) 冬菇豬肉燒賣 (約30粒)

To PDFIngredients30 Shaomai wrappers (or Cantonese wonton wrappers), 180 g ground pork, 60 g shrimps (shelled and diced), 6 dried shiitake mushrooms (soaked till soft, diced), green peas and grated carrot as garnish

Seasoning: 2 tbsp light soy sauce, ½ tsp sugar, 1 tbsp cornstarch, pepper, sesame oil

燒賣皮或廣東雲吞皮30塊、免治豬肉180克、蝦仁60克(切幼粒)、冬菇6隻(浸軟、切幼粒)、青豆及甘筍蓉作裝飾

調味料:生抽2湯匙、糖半茶匙、生粉1湯匙,胡椒粉及麻油適量

Preparation1) Mix pork, shrimps and mushrooms in a bowl. Add seasoning and stir in one direction until sticky. Lift the mixture and slap it in a bowl for 20 times. Refrigerate for 1 hour.

2) Lay a Shaomai wrapper flat. Put 1 tsp of filling on it. Wrap the wrapper up into an open-top dumpling. Garnish with grated carrot and a green pea.

3) Put Shaomai on a greased perforated steaming pan. Steam in Miele puresteam at 100°C for 3 to 4 minutes.

2) 取燒賣皮一塊,放入約1茶匙肉餡,包成燒賣,以青豆及少量甘筍蓉作裝飾。

3) 燒賣放已鋪焗爐紙的多孔蒸盤上,入Miele蒸爐以100℃蒸3至4分鐘。
