Preparation1) Clean the chicken parts and blanch in boiling water. Cool down in cold water and drain well. Place in a heat resistant container with ginger and wine. Fill with water until just covered.

2) Clean and drain the dates. Place in a deep dish, sprinkle in the sugar and cover with aluminium foil. Place it along with the chicken parts in the Miele puresteam at 100℃ for 90 minutes.

3) Mash steamed dates with a fork in a large bowl and sift through a tea strainer to separate the flesh from the skin.

4) Skim the grease and filter the chicken stock through cheesecloth and stir well with the dates. Pour this mixture into a moist jelly mould. Chill in refrigerator until set before serving.

1) 鳳爪及雞翼尖洗淨後以沸水略燙,過冷河後瀝乾,放耐熱容器中,加入薑片及紹酒拌勻,注入清水至蓋面待用。

2) 紅棗洗淨後瀝乾,以深碟盛載,均勻地灑上黑糖碎後加蓋錫紙,連同載鳳爪及雞翼尖的容器一同放Miele蒸爐以100℃蒸90分鐘後取出。

3) 把蒸至軟熟的紅棗放大碗中以叉壓碎,以茶隔濾去外皮成棗泥備用。

4) 將蒸鳳爪及雞翼尖的浮油以湯匙隔去,以紗布將湯水過濾至棗泥中拌勻,再倒入已用清水濕潤的模具中,放雪櫃冷藏至凝固即可享用。
