Preparation1) Grate the zest of the lime and then juice it. Set aside the zest and the juice for later use. Finely chop the coriander, bird’s eye chilli and garlic.

2) In a small bowl, mix the garlic, fish sauce, water and palm sugar. Steam in the Miele puresteam DG 6010 steam oven at 60°C for 2 minutes. Stir until sugar dissolves. Add the rest of the dressing ingredients from step 1, and mix well.

3) Wipe the fish fillet dry. Put it on a greased heatproof dish. Sprinkle with salt and ground white pepper. Steam in the DG 6010 at 95°C for 5 minutes.

4) Drizzle with the dressing and serve hot.

3) 龍躉抹淨,放在已塗油的耐熱碟上,灑上鹽、胡椒粉調味,放Miele蒸爐以95°C蒸5分鐘。

4) 汁料淋在魚柳上趁熱享用。
