Steamed Rice with Preserved Meat, Taro & Kale (Serves 3 to 4) 香芋芥蘭油鴨腿鴛鴦腸粒蒸飯 - 暖胃滋補 (3至4位份)

Seasonings: Light soy 2tbsp, dark soy 1tbsp,sugar 2tsp,chicken stock 4tbsp, pepper & sesame oil to taste

Preparation1) Wash the duck leg, sausages with warm water & pat dry.

2) Cut the sausages & kale into small dices & place them in a bowl.

3) Mix the seasonings in a small bowl.

4) Wash the rice & drain. Place the rice with the taro in a heat proof container, pour in 3 cups of water and place in Miele Puresteam at 100C for 20 minutes until the rice get done.

5) Lay the duck leg then sprinkle the sausage & kale evenly over the rice, return the rice & seasonings into Miele Puresteam at 100C for 12 minutes.

6) To serve, cut the duck leg into bite size, toss up the rice with the sausage & sprinkle in the seasonings to taste.

1) 油鴨腿、鮮鴨潤腸及臘腸以暖水洗淨後抹乾。

2) 鮮鴨潤腸、臘腸及芥蘭切成小粒放碗中拌勻備用。

3) 調味料放小碗中拌勻。

4) 白米洗淨後瀝乾,連同芋頭粒一同放入耐熱容器內,注入3杯清水放Miele蒸爐以100C蒸20分鐘至米飯熟透。

5) 將臘腸粒均勻地鋪在飯面,再放上油鴨腿,將整盤米飯連同調味料分層一同放Miele蒸爐以100C蒸12分鐘後取出。

6) 將油鴨腿取出切成小塊,加上蔥粒,把米飯跟臘腸粒等材料一同打鬆拌勻連同油鴨腿及淋上適量調味料即可享用。
